Mixed Vegetable Sevai is one of the varieties of South Indian Sevai. It is a mixture of vegetables together with ordinary sevai and it is healthy also.
1 cup sevai
1 cup mixed vegetable (carrot, onion , peas, capsicum, curry beans, potato, tomato- cut into small pieces uniformly)
1/2 tsp. finely chopped ginger
2 tsp of chopped coriander
4 green chillies slit lengthwise
1 tsp. mustard seeds
Cardamom 2 nos ( optional)
Clove 4 nos ( optional)
Cinnamon ½ inch piece ( optional)
1 tbsp. of oil
Spread the sevai in a wide bottom pan. Let it cool down. Slowly toss it with a sharp ladle. The sevai will break into pieces. ( as we have done for coconut sevai)
Heat the oil in a wide bottom pan. Add the mustard seeds along with the spices. Once the mustard seeds splutter add curry leaves and vegetabels and cook till the vegetables are soft. Add tomato atlast and sauté for 2 more minutes.Also add the required amount of salt.
Cook the vegetables by sprinkling water. If the vegetables has lot of water content, then the sevai will become soggy.
Add the sevai and mix it well and switch off the stove. Garnish it with coriander.
Usually I don’t add turmeric powder. If you prefer the yellow colour you can add it while cooking the vegetables .
